Abstract
The development of food process is based on the principles of food science and technology, chemical engineering and on the practical experience of food engineers and food technologists. In plant design, the experience and developments in other technical fields, such as materials science, mechanical engineering and management, should also be considered. Process design includes the synthesis, analysis, evaluation and optimization of process alternatives. Food process design is essential in the design of new plants in the modification or expansion of an existing plant, in the production of a new product and in the simulation and control of an operating plant.

Abstract
Gıda işleme ve tesis tasarımının gelişmesi; gıda bilimi ve teknolojisinin, kimya mühendisliğinin temelleri ile gıda, kimya mühendisleri ve gıda uzmanlarının pratik deneyimleri temeline dayanmaktadır. Tesis tasarımında; materyal bilimi, makine mühendisliği ve işletme yönetimi gibi diğer teknik alanlardaki deneyim ve gelişmeler de göz önünde bulundurulmalıdır. Proses tasarımı; proses alternatiflerinin en iyi şekilde kullanılması, değerlendirmesi, analiz ve sentezini içerir. Gıda proses tasarımı yeni tesislerin tasarımında, mevcut tesislerin genişletilip değiştirmesinde, yeni bir ürünün üretilmesinde ve işleyen tesisin kontrolünde oldukça önemlidir.
