Ali Yiğit focuses on climate change and environmental effects on cereal grain quality. Chemical changes under different ecological conditions and hot environment effects on bread-making quality, aminoacid, phenolic acid and antioxidant composition of cereal grains. Ali Yiğit aims to determine the effects of agricultural production and agronomic techniques on food safety, human health and nourishment in his researches.
