Assessment of Physicochemical Parameters, Fatty Acids and Minerals in Anatolian Water Buffalo (Bubalus bubalis) Colostrum
Abstract
This study aimed to determine the physicochemical parameters, fatty acid composition, and mineral contents of Anatolian water buffalo (Bubalus bubalis) colostrum. Colostrum is important not only as the first secretion that provides immune support for newborns but also as a nutrient-rich food source. Therefore, in addition to being the first pioneering study conducted on Anatolian Water Buffaloes, this research aims to provide fundamental data for future studies in animal science, animal health and nutrition, as well as gastronomic and human nutrition research through a comprehensive evaluation of the nutritional composition of colostrum. Colostrum samples were obtained from Bubalus bubalis bred in Türkiye. The Anatolian Water Buffalo is the only native breed of this species in Turkey. Colostrum samples were collected within 12 hours after parturition from Anatolian Water Buffalo cows at the beginning of their second lactation. Analyses of physicochemical composition, fatty acid profiles, and mineral elements were performed using FOSS MilkoScan™ FT-120, Gas Chromatography (GC), and Inductively Coupled Plasma Mass Spectrometry (ICP-MS), respectively. A total of 27 fatty acids were identified. Among these, the major fatty acids were C16:0 (palmitic acid, 31.77%), C18:1n9c (oleic acid, 26.60%), C14:0 (myristic acid, 13.22%), and C18:0 (stearic acid, 8.76%), accounting for 80.35% of the total fatty acids. The fatty acid groups were distributed as saturated fatty acids (ΣSFA, 64.81%), monounsaturated fatty acids (ΣMUFA, 30.59%), and polyunsaturated fatty acids (ΣPUFA, 4.61%). Eight minerals were determined, including Mn (0.12 ppm), Zn (20.42 ppm), Fe (4.79 ppm), Mg (185.21 ppm), Na (761.59 ppm), K (1206.64 ppm), Ca (587.01 ppm), and P (1733.05 ppm). Discussion: The results revealed that colostrum of the Anatolian Water Buffalo is characterized by a high proportion of saturated and monounsaturated fatty acids, together with significant levels of essential minerals. These findings suggest that buffalo colostrum has a unique nutritional profile, which may play a critical role not only in the health and growth of buffalo calves but also in supporting human nutrition. The nutritional profile of the Anatolian Water Buffalo colostrum highlights its importance as a functional food source. The obtained data can serve as a basis for future studies on buffalo colostrum and milk composition. Further research focusing on bioactive compounds, antioxidant properties, and potential applications in human nutrition is recommended.
