This research was conducted to determine the quality characteristics of 12 soybean (Glycine max (L.) Merrill) cultivars grown as the main product in Kahramanmaraş ecological conditions. The study was carried out in 2016 at the Kahramanmaraş Eastern Mediterranean Gateway Agricultural Research Institute trial site. In the experiment, Arısoy, Atakişi, Ataem, Bravo, Cinsoy, Çetinbey, May 5312, May 5414, Nova, SA 88, Türksoy and Umut soybean varieties were studied. Oil ratio, myristic acid, palmitic acid, palmiteloic acid, heptadecanoic acid, stearic acid, oleic acid, linoleic acid, linolenic acid, arachidic acid, behenic acid and lignoceric acid ratio, oleic acid/linoleic acid ratio; one of the oil stability criteria, iodine value, grain yield and hundred seed weight were investigated. As a result of the study, the values of some important properties examined in soybean varieties such as oil content, oleic acid, linoleic acid, linoleic acid, and seed yield, were varied between 18.003 - 23.303%, 22.115 - 26.254%, 51.240 - 55.505%, 6.534 - 7.560% and 1705 - 3285 kg ha-1, respectively. Important differences between varieties were found for all the characteristics studied. In the variety of Ataem, which had the highest oil rate (23.30%), palmitoleic acid (0.088%), oleic acid (26.254%), arachidic acid (0.186%) and O/L value (0.513%) were highest, while in terms of stearic acid (4,306) and behenic acid (0.353%), it was as ranked second among varieties. As a result of the study, grain yield (3145 kg ha-1), heptadecanoic acid (% 0.086), linoleic acid(% 55.505) and iodine value (115.16) were the highest for May 5414 cultivar, while, myristic acid(% 0.067), palmitic acid(% 11.026) and behenic acid (% 0.355) were the highest in cultivar TU 88.
