Başlıca Sebze Ürünlerinde Üretim Maliyetlerini Etkileyen Faktörlerin Belirlenmesi

The main aim of the study is to calculate the production costs and economic results of products such as tomatoes, peppers, eggplant, zucchini and cucumber that are grown intensively in Antalya. For this purpose, a survey was conducted with 232 sample enterprises producing tomatoes in Antalya and determined according to stratified random sampling method. As a result of the survey, 1 kg costs of pepper, tomato, zucchini, eggplant and cucumber products were calculated as 2.41 TL-kg, 2.37 TL-kg, 2.69 TL-kg, 3.07 TL-kg and 2.46 TL-kg, respectively. Within the scope of the study, besides the costs of the products, gross profits and net profits were calculated. 1 kg gross profit of pepper production 0.39 TL-kg, 1 kg net profit -0.24 TL-kg, 1 kg gross profit of tomato production 0.35 TL-kg, 1 kg net profit -0.26 TL-kg, 1 kg gross profit of pumpkin production 0.23 TL-kg, 1 kg net profit -0.56 TL-kg, 1 kg gross profit of eggplant production 0.44 TL-kg, 1 kg net profit -0.41 TL-kg and 1 kg gross profit of pepper production is 0.35 TL-kg, 1 kg net profit is -0.37 TL-kg. In addition, the factors affecting the costs of the products were estimated using linear regression analysis. According to the results of the analysis, the costs of vegetable production, seedling, fertilizer and medicine positively, material and foreign labor costs negatively. According to the results obtained, it was determined that the cost and profit advantage provided by economies of scale did not occur in greenhouse enterprises and despite the growth of the operating scales, net profit was negative.

Çalışmanın temel amacı Antalya ilinde yoğun olarak yetiştirilen başlıca sebzelerin (domates, biber, patlıcan, kabak ve hıyar) üretim maliyetlerini ve ekonomik sonuçlarını hesaplayarak üretim maliyetlerine etki eden faktörleri belirlemektir. Bu amaca yönelik olarak Antalya ilinde sebze üretimi yapan ve tabakalı tesadüfi örnekleme yöntemine göre belirlenen 232 adet işletmeyle anket çalışması gerçekleştirilmiştir. Anket sonucunda biber, domates, kabak, patlıcan ve hıyar ürünlerinin 1 kg maliyetleri sırasıyla 2.41 TL, 2.37 TL, 2.69 TL, 3.07 TL ve 2.46 TL olarak hesaplanmıştır. Çalışma kapsamında ürünlerin maliyetlerine ek olarak brüt ve net kârları hesaplanmıştır. Biber üretiminin 1 kg brüt kârı 0.39 TL, 1 kg net kârı -0.24 TL, domates üretiminin 1 kg brüt kârı 0.35 TL, 1 kg net kârı -0.26 TL, kabak üretiminin 1 kg brüt kârı 0.23 TL, 1 kg net kârı -0,56 TL, patlıcan üretiminin 1 kg brüt kârı 0.44 TL, 1 kg net kârı -0.41 TL ve hıyar üretiminin 1 kg brüt kârı 0.35 TL, 1 kg net kârı -0.37 TL olarak belirlenmiştir. Çalışmada ürünlerin maliyetlerini etkileyen faktörler doğrusal regresyon analiziyle tahmin edilmiştir. Analiz sonuçlarına göre sebze üretim maliyetlerini fide, gübre ve ilaç masrafları pozitif yönde, materyal ve mevsimlik işgücü masrafı negatif yönde etkilemiştir. Elde edilen sonuçlara göre sera işletmelerinde ölçek ekonomisiyle sağlanan maliyet ve kâr avantajının oluşmadığı, dolayısıyla işletme ölçeklerinin büyümesine karşı net kârın negatif olduğu belirlenmiştir.
